A glycation reaction was reproduced in vitro. Aminoguanidine, a well-known nonenzymatic glycosylation inhibitor,demonstrated a dose-dependent antiglycation effect. The results of the experiment have shown that this model can be used to search for new Maillard reaction inhibitors.
